Heya!
My name is Marc and I am the founder of Its perfect. I grew up in both Canada and Switzerland and whenever I was in one place I would get nostalgic about the other. And when I was in Switzerland I would always miss those sweet syrupy sunday diner breakfasts. Pancakes swimming in a pool of maple Syrup.. still the comfiest of comfort foods to me!
Forward some years later and a life spent selling and marketing beverages to restaurants, cooking and baking for my friends and family... I wanted to have my own thing. And I wanted something that connects me to my second home in Canada. Something deeply personal but also the best Syrup you can find in Canada.. now in Switzerland
So here it is. The syrup that brings me back to my childhood memories spent on a farm in Ontario Canada.
Always was & always will be.
It's perfect.
Yes, this is the perfect maple syrup. But hear me out!
The name, It’s perfect. Should also be aa gentle reminder.. from that optimistic friend or loved one. A little, all is ok!
I wanted my brand and my core message to be inherently positive and optimistic. Because we only live once and live is confusing enough.
What I mean is, what we get is what we needed. Sometime we like it and sometimes we don't. However, we make the best of it. As it is either a blessing or a lesson. So whatever the world throughs at you, remember.. Its perfect.
The search.
The bushes of northern Ontario. Where Sugar maple grows wild.
Over 95% of the trees tapped for this syrup are sugar Maple trees and roughly 5% are red- and black maple trees. The trees that we tap occur naturally in this remote and mostly untouched area of northern Ontario Canada.
Instead of changing the land and planting trees for our syrup, we went far to find the perfect place. Where nature intended these trees to grow.
The Hunt.
Tapping only the perfect trees.
Needless to say, we only tap the strongest trees in the forest. Our youngest trees are around 30 years old. The oldest up to century. All our trees are selected and stay connected all year around using an intricate system of hoses that spans kilometers deep into the bush. We make sure to extract the sap carefully and to not drain the trees. This method ensures we can sustainably tap our trees season after season.
The craft.
The craft of cooking Maple Syrup
Boiling the maple sap down in large evaporators with a continuous inflow of hot sap, a rolling controlled boil in wide pans to evaporate consistently and promote flavour development through the maillard reaction. True mastery lies in controlling temperatures, managing the in and out flows, skimming foam and monitoring the syrup until it reaches its perfect flavour, texture and sweetness.
the team.
Partners in Syrup
I spent years finding the perfect partners to create It's perfect Maple Syrup. John and the good folks at Pefferlaw creek Farms in Uxbridge Ontario are the best.
They are an independent family operation dedicated to producing small batches of the highest quality maple syrup. Organic only of course. Every batch gets treated with the greatest attention to detail and every bottle that leaves the farm is guaranteed to be maple syrup of the highest quality.
