Harissa Maple Chicken
Maple Harissa Chicken
Here's what you need..
- 6 to 8 Chicken thighs or drumsticks
- 2 tablespoons harissa paste or a very spicy chilli oil
- 50 ml maple syrup (Dark or very dark)
- 3 tablespoon olive oil
- 1 tablespoon soy sauce
- 2 teaspoon ground cumin
- 2 teaspoons sweet paprika
- 5 garlic cloves
- 500 g Potatoes
- 1 large red onion
- 2 large red bell peppers
- 1 lemon
- Cilantro and or parsley, which ever you prefer
..and here's how to make it!
- Heat the oven to 180 degrees Celsius and salt the chicken in the sheet pan that you’re going to use for this.
- In a medium bowl, prepare the marinade by adding harissa paste, maple syrup, olive oil, soy sauce, cumin, paprika, 2 minced garlic cloves, the juice of a half lemon and then mix it well. Adjust the taste to your liking before adding the chicken.
- Add the chicken to the marinade and make sure every piece of chicken is nicely covered with the sauce. Cover and let it sit in the fridge for at least 30 minutes. The more the better..
- Cut your potatoes into 1-2 cm cubes, rinse them under cold water and then toss them in the sheet pan with some good olive oil and a healthy amount of salt.
- Add the chicken skin side up on top of the potatoes and roast for 25 minutes or until the chicken gets a nice golden color.
- Cut your bell peppers into 2 cm cubes and roughly chop your onion and the remaining garlic cloves and mix it together.
- Take the pan out of the oven and check the chicken by poking it with a toothpick and if the liquid coming out ist pink or red, it needs to go back in. If its clear you take the chicken out at this point and set it aside.
- Add the peppers, onion, garlic and the rest of the marinade to the pan and toss until everything is covered nicely.Place back into the oven for another 10 to 15 minutes or until the bell peppers have a nice charr on them.
- Once its cooked to your liking, garnish with cilantro and or parsley. Sprinkle some lemon juice and serve immediately.
- If the chicken is too spicy for one of your guests, serve some greek yoghurt or Ayran on the side to keep the peace. :-)
